Slow Cooker BBQ Chicken

basics May 20, 2026

This recipe is one of my go-tos for keeping an easy protein option on hand. The whole family loves it, and it’s such a simple way to add protein to all kinds of meals.

Ingredients

  • 1 tablespoon olive oil
  • 1 bottle BBQ sauce (I like Primal Kitchen)
  • 2 lbs chicken breasts
  • 1 tablespoon cornstarch

Instructions

  1. Add olive oil to the slow cooker.
  2. Place chicken breasts in the slow cooker and cover with BBQ sauce.
  3. Cook on high for 2–3 hours or on low for 5–6 hours, until the chicken is tender and easy to shred.
  4. Remove the chicken from the slow cooker and shred using two forks.
  5. In a small bowl, whisk the cornstarch with 1–2 tablespoons cold water to create a slurry. Stir the slurry into the BBQ sauce in the slow cooker and cook for a few minutes, until the sauce thickens slightly.
  6. Return the shredded chicken to the slow cooker and stir to coat with sauce.
  7. Serve with rice and steamed vegetables, or use in sandwiches, tacos, or quesadillas.
