Slow Cooker Chicken and Bok Choy

This is such an easy recipe, and if you add a few more vegetables (broccoli, peppers, etc.), it makes a complete meal.

 

Ingredients

  • 2 medium onions, chopped
  • 4 garlic cloves, minced
  • 1/3 cup apple cider vinegar
  • 1/3 cup soy sauce
  • 1 tablespoon brown sugar
  • 1 bay leaf
  • 1/2 teaspoon pepper
  • 1 3/4 lbs chicken tenders
  • 1 teaspoon paprika
  • 2 heads bok choy, sliced

 

Instructions

  1. Place onions, garlic, apple cider vinegar, soy sauce, brown sugar, bay leaf, and pepper in the slow cooker. Stir to combine.
  2. Add chicken on top and sprinkle with paprika.
  3. Cover and cook on low for 7–8 hours or on high for 3–4 hours.
  4. About 10 minutes before serving, add bok choy and cook until softened.
  5. Remove bay leaf before serving. Serve over rice.
