Slow Cooker Pesto Chicken

I always make this recipe with the hopes of having easy chicken on hand but it flies every time I make it. One of my kids loves making sandwiches with it and she just adds some shredded mozzarella and tomato on top.
Ingredients
1 tablespoon olive oil
1 pound chicken breast
1 cup pesto sauce (I like buying the Costco brand, use one cup and freeze the rest for future use)
Instructions
- Add the olive oil to the bottom of the slow cooker.
- Place the chicken in the slow cooker and pour the pesto sauce on top.
- Cook on high for 2 hours or low for 5–6 hours, until the chicken is tender and easy to shred.
- Shred the chicken and discard most of the sauce. The sauce may separate during cooking, so I usually remove some of the excess oil.
- Return the shredded chicken to the slow cooker and coat with a small amount of the remaining sauce.
- Serve with pasta, in paninis, or on top of salads.
